Taiyaki’s story begins in the late Edo period (1830s), initially known as "Imagawa-yaki," named after its samurai helmet-like shape. In the Meiji era, Tokyo’s Asakusa confectioners reinvented it into the auspicious sea bream form, symbolizing prosperity—a motif deeply rooted in Japanese festivals where tai fish is a centerpiece of celebratory meals. This clever redesign turned the snack into a nationwide sensation. Post-WWII, with increased red bean imports and sugar availability, the classic red bean paste filling solidified its place in Japan’s collective (taste memory).
